Recipes to Try This Fall

I love that here in Fairfield County we’ve gotten just that little hint of fall, cooler night, leaves starting to fall. We’re not quite in full fall mode yet, but easing into it. Besides loving everything and anything pumpkin, (sorry, not sorry), I love good fall recipes. Think apples, stews, squashes, and comfort!

I’ve found some great recipes I want to try this fall. And they aren’t all in the Instant Pot! Just kidding, they are!

Instant Pot Pumpkin Chili

Who knew that three of my favorite things could come together so easily? Sounds delicious, cooking with pumpkin can give a nice creamy texture without adding extra fat. This recipe has some special ingredients too that will make you question it, but I’ve cooked with these before in some savory dishes and they definitely give some flavors that go well together. Don’t forget your toppings!

Instant Pot Vegan Butternut Squash Soup

There is nothing better than a great butternut squash soup, especially when there is some apple to sweeten the pot!  This recipe looks even more interesting as it includes coconut milk. I’m sure the added creaminess makes a nice rich soup.

Instant Pot Red Cabbage & Apples 

As I’ve gotten older I’ve found I really enjoy cabbage in many forms. Red cabbage is not only a very healthy veggie, but it can be delicious. I actually found a café in South Norwalk that serves red cabbage salad as a side with their sandwiches! I think this recipes sounds like it will be a sweet and tangy cabbage dish.

Instant Pot Spaghetti Squash

So this isn’t much a recipe as it is spaghetti squash prep. I’ve learned a few tips over the years on how best to prepare it so that you can scoop it easily. You can cut and put in the Instant Pot, just make sure to cut it lengthwise, then you get longer strands. Another method is to poke some holes in it and microwave for about 15 minutes and then cut lengthwise. Then you can top the spaghetti squash with any of your favorite toppings or sauces.

Instant Pot Pot Roast 

I love a good pot roast mostly when it starts to get much cooler out. Perhaps an early Sunday dinner. Just a classic meal, meat and potatoes, and of course some carrots. While looking at this particular recipe I also came across this beef stew, both sound amazing!

Instant Pot Apple Cider

Nothing quite warms you up in the fall like a mug of warm apple cider! You can actually make the cider yourself with this recipe! When making it in the Instant Pot, just make sure your sealing ring and top are cleaned really well. Or even use a dedicated sealing ring used just for sweet recipes.
